You may have seen a new “yogurt” on the shelves at your local market. While new to America, skyr (pronounced SKEER) has been a part of Icelandic cuisine for more than a thousand years.

The process by which skyr is made is more like that of cheese, however, its consistency – and to some degree, its taste – is more like a yogurt. Which is it? It’s hard to say. We do know this cultured dairy product is a good source of protein without the sugar found in many popular yogurts. So next time, try skyr. You might find a new favorite!
